OVERVIEW

Every cut of Tallawanta Artesian Wagyu is the result of careful breeding, slow raising, and deep respect for the craft. Bred from award-winning Angus and Japanese Wagyu bloodlines, our F1 cattle are raised for 36 to 48 months on clean, open pastures and artesian spring water in Northwest New South Wales.

They are finished on a hand-selected, low-energy grain diet for over 400 days, allowing natural marbling to develop slowly and richly. The result is buttery texture, balanced sweetness, and a signature Wagyu depth that lingers. Butchering follows traditional methods to preserve tenderness and ensure each cut lives up to the Tallawanta name—refined, consistent, and unmistakably luxurious.

The best things take time, and our range of beef is no exception. It begins on slow-growing pastures, nourished by artesian water and raised with care, not haste. Our cattle live without stress, free to move, graze and grow naturally. When the time is right, they’re finished on a hand selected grain blend perfected over years—designed to enhance marbling, richness and tenderness. This is time doing what time does best: building flavour, texture and depth no shortcut can replicate.
